Ina Garten’s recipes are simple and amazing, and this was apparently a best seller among her prepared foods in her Barefoot Contessa shop in the Hamptons.
This is great for a weeknight or an easy main course for guests. I get so bored with plain baked chicken every night. It is key to serve the pan juices over the chicken for the most delicious effect. Very moist, and the lemon/wine/garlic combination works very well. Ina Garten said she also eats the lemon wedges out of the pan. I tried this, and I don’t recommend it. Serve this with brown rice (or couscous) and a green vegetable, and it is fabulous.
